Part Two of my Christmas gifts; almond roca!
First, I toasted some slivered almonds
Then I melted some butter and sugar together:
I then cooked the mixture until it reached the hard-crack stage
Then I spread the almonds on a cookie sheet, poured the toffee mixture on top and sprinkled some chocolate chips on top and waited for a couple of minutes to let it melt
Then I swirled the chocolate around with a spoon
Waited for it to cool and then broke it into pieces
Finally, they were packed into small bags
Verdict: very popular among my friends! I will never buy store-bought almond roca again!

Niagara Falls 2010
Yay! Sun! Maybe a little too much but I'm not complaining because the last time I was here it rained the whole day and I missed seeing the afternoon rainbow:(
A friendly local man gave us a bit of history of the Falls. He was so nice and informative! He told us he was present (three years old) when Queen Elizabeth the Second dedicated the bridge.
All along the road we saw beautiful b&b's and they all had no vacancies.
I went on the Maid of the Mist again. Perfect day to get soaked!
And, yes, we saw the rainbow!!!!!!!
I bought great fudge and peanut brittle from this little place. The owner has been making fudge in there for over 30 years!
